Document Purpose: The purpose of this document is to control the use of ingredients identified as allergens in the facility, as well as to prevent cross contamination with undeclared allergen ingredients in finished food products. Generally, the purpose of the allergen control program is to gather all the allergen controls in one location in the HACCP system.
